On the off-chance that it may be relevant to some people here, the ICBI is organising a one-day symposium on setting up taprooms under the new licensing law:

ICBI wrote:This is the essential events for brewers, cider makers, distillers and drinks producers in Ireland who want to learn more about new licensing under the Intoxicating Liquor (Breweries and Distilleries) Act.

Aimed at the independent sector, this day long symposium will bring together specialists across all areas to give you the information required to apply successfully for one of the new licences. The morning session will consist of presentations by our expert speakers followed by a Q&A panel. Amongst the confirmed speakers are Dorothy Collins, barrister at law and licencing expert, and solicitor Sinead McCabe. We will also have a fire consultant and planning and architecture specialist.

Following lunch we will switch focus to designing and marketing your tourism experience with Sinéad Hennessy, food development officer with Fáilte Ireland. Sinéad will take us through research and visitor expectations, highlighting case studies from Ireland and overseas with guest speakers from already successful experiences.

With plenty of opportunity for questions, discussion and networking with the Irish craft drinks producers this is a must-attend event for anyone looking to develop or grow their drinks experience in the Irish market.

Tickets will be on sale next week. I'll post any more details when I have them.
